What is a neat but fairly easy kind of knife to make. I'm a newbie. :-)

J,

you might try a kit knife. This help you to learn the fit and finish of the guard and handle. (Not as easy as it sounds) This can be done with your dremel, files and sandpapers (wet/dry up to 1500/2000 grit).

Try KitKnives.com

Texas Knifemakers Supply

Koval Knives

They have tons of kits, tools and supplies.

I hope this helps,

Bob Sigmon

Check out the kitknife forum also.

A kit knife is probably a good idea. As explained above, the fit and finish will of a kit knife will teach you a lot.
