Hatatchi "White" Steel
Hey guys, dont know if this is the right forum to be posting this, Im trying to make a traditional Sushi knife for a customer, I have read several refrences to "Hatatchi "White" steel used as the core steel in the blade. Im not having any luck finding it on the web, but was wondering if there was a "close" U.S. steel that would be able to substatute?? I am planning on using Wrought iron as the outer shell of the blade.

Just use O-1, that will work very well.

Mike, if you spell it "Hitachi" and search on "Hitachi White Steel", you'll get quite a few hits, including links to Murray Carter's website. You could write him.
