At one time, the Dirk was most popular. Nowadays, it's probably like this:

Loveless-style Drop

Bill's Drop and/or Classic Hunter

Loveless-Backpacker

Dirk

Various types of fighters with 6-7" blades

I'd have to check my records, and will do so when I get time, but that's my best guess, right now.

Stag, by a mile. I do not have enough stag to fill my present orders, so am not promising it at this time, of course if it becomes available again in large enough quantities, we can do that, but it's not looking good. However...... there are some European deer that might work, have seen a small set or two, (but they were pretty plani and thin), and even some whole Sambar antlers that are showing up a little. I'm hoping!
