Three things to try:
1. low angle light with minimal diffusion - much experimentation needed but it works
Example:

2. use a 'gobo' between the light and the blade - usually a dark grey or black piece of foam-board cut to size (again, much experimentation required) so that when you position it properly it partially blocks or feathers the light onto the blade, thus darkening it and bringing out the hamnon.
Example:

3. shoot the blade outside in the sun - as above, experiment with positioning.
Example:

BTW, these techniques also work for certain damascus blades, hollow-ground blades and bright mirror polish finishes.

My suggestion would be a composite type shot. Under expose by -.5 or 2/3'rd stop then a normal. Then in your editor an exposure merge. This necessitates minimal two exposures so you'll want to do this with a tripod in most instances. Can also be done on a single exposure if you are willing to post shot process the RAW file similar to taking the shot twice.

Great suggestion, Mike. To get more contrast I usually have to go two stops on either side of my ideal exposure. It may be because my lights are so bright. Every set-up is different. But, great tip - it's so simple and effective.
