Somebody should be able to sell you a foot of 1084 but if they don't just use the 1080. It's very close.

As for edge angle, probably not worth the trouble. Some guys don't have any tools for setting an edge angle. For those who do, the angle setting mechanism isn't exact enough - my Edge Pro has a big blue dot on it for 19 degrees. I'm supposed to believe that anywhere in that blue area is 19 degrees and that the width of the blade I'm sharpening isn't affecting that at all? C'mon. Besides, I may have to re-grind some. Anyway, we mostly want to know if the edge will chip or take a permanent bend. As long as the edge is thin enough for that test the exact angle won't be terribly important ...
