I stay up at night.

Actually knifemaking is a full-time job for me. I put in a lot of hours everyday except Sunday. Because I work for myself, I set the pace. I switch from task to task as I want. I average 50 to 60 hours a week in the shop. Sometimes more sometimes less depending on the order load.
Sometimes you find yourself making nothing but mistakes working on a custom piece. That's when I step back and look for something else to work on for a while. Usually it is building a tool.
