How do you stand knife on edge in forge?

What kind of forge, not that it matters. Use your tongs. For a coal forge (which I'm fairly certain your not using) you'd ruin your blade in a few seconds to just stand it in the fire. For a gas forge, again tongs. If you are using a furnace there are ceramic stands that can be obtained or you can get some soft firebrick and make your own. The only time standing a blade up is necessary is during heat treat.

Put a masonary cut off disc in your side grinder and cut one out of medium hard fire brick. trim it down thin but with as wide a base as you can fit in your forge so it won't tip over. Thinner you make it the faster it will heat up to forge temp. You can slice and shape brick a lot easier than you might think. Only take a couple of minutes at best, so you can experiment a lot with little wasted time.
(All this, considering you are talking gas not coal forge.)

As JM said, if you don't plan using it a lot, holding with tongs is best simple approach.
