Zwilling J.A. Henckels Twin Five 5 Star mods

This Henckels was part of a trade for re-handling some kitchen knives. The Henckels is nice though it wasn't to our preferences so some mods done. That long bolster and it comes fairly hard edged on the spline with a pinch grip. Using it any length of time for prep was a hand irritant.

Shaved the long bolster off gave it more of spear point. rounded the spline over so that it doesn't dig into the hand. The heel is a bit high so might take that down a bit so that rocking cuts suit our preference.

Took the hump on the handle down a bit more so it is straighter which feels more hand fitting for us. The steel on this performs quite well which I wasn't expecting. A prior set of Henckles I disliked at the onset and no matter how I thinned the blade or sharpened, it didn't perform to my likes. This one I like over the VG10 Shun santoku.
