New to knives and kits

Hello
Just ordered two kits from KnifeKits. The Gentleman's Companion and the Midwest Hunter. So I'm not sure what I need to do about the handles for these. I've got some kiaat wood and some African mahogany as well. Will this wood do for putting handles together? Also, will any two part epoxy do the trick as an adhesive?
