Looking for a Knifemaker

My brother is the executive chef at a 5 star country club restaurant, and he will soon be receiving his ACF Master Chef certification.

I would like to give him a nice custom Santoku or chef knife as a congratulatory gift. I want it to be a knife that he can actually use, so nothing fancy or elaborate, and I am thinking of spending around $250 to $300 for it.

Does anyone have any recommendations for someone who can make me one of these?
I have been looking at many online, but I have mostly been a buyer of tactical blades, so most of the makers of kitchen cutlery I am unfamiliar with.

Also what are some of the best steels for a working kitchen knife?

Any help would be greatly appreciated.

Also, there was a post from one of the members here a number of months ago with knives he made for a commission that was going to be a gift to Mario Batale (sp?). I forget who made the post though. . .

Go to the search and look-up "Kitchen KITH" You'll have to scroll threw the pages but their are pics of the knives that were made for the KITH.If anythig strikes your fancy simply PM the maker.It'll give you an idea of what different makers are doing.Also their are some good makers that were'nt in the KITH. Iron monkey,And Drac do nice kitchen type knives.

Here is one that I did in damascus, I would make a similar knife for $300

Just in case you might think such a knife is too pretty to use, I use high quality tool steel for my damascus, and the knives I make are made to be used.

I too make custom Chef knives, but I am currenky away from home with work, and not taking orders. I would HIGHLY reccdomend Ray Rogers. He is a member of this forum, or go to rayrogers.com

I can defnitely make you one. In fact I have some 52100 sheet that I need to rough out for a santoku in the exact same style as the one that made. Price would be 250 and I have a bunch of different handle materials available. Del's stuff is good too. My website is http://frazee.blademakers.com

I am so flattered that another person on this forum thinks I made a knife good enough to recommend. I just got a recharge for getting back in the shop. (Not selling a knife for two months can kind of get under my skin .

My wife is the owner/user of the Delbert Ealy damascus knife pictured above. She loves it and it performs as a fine custom knife should (i.e., VERY well and better than any factory knife available)

All the options listed above are good ones. You'll have no problem finding what you seek here my friend.

My own experience with kitchen knives is limited so I'll not be tossing my hat in the ring, but good luck!

As for steels, high performance stainless is the modern norm for high-end kitchen cutlery, but perhaps a master chef would prefer something with a bit more character, like maybe a classy hamon on a differentially heat treated high carbon steel. That's a feature you'll not find on any factory knife and tells the world that, "This is a hand made knife, by a custom knifemaker who knows what he's doing and you SHOULD be jealous of me!"

Hopefully he'll stick around. While looking over last year's Newbie KITH thread I noticed there are a lot of guys in that KITH who haven't been around in a while. I was kinda thinking it's about time to have another KITH after the holidays. . .
