Zwilling J.A. Henckels Twin Five 5 Star mods
This Henckels was part of a trade for re-handling some kitchen knives. The Henckels is nice though it wasn't to our preferences so some mods done. That long bolster and it comes fairly hard edged on the spline with a pinch grip. Using it any length of time for prep was a hand irritant.
Shaved the long bolster off gave it more of spear point. rounded the spline over so that it doesn't dig into the hand. The heel is a bit high so might take that down a bit so that rocking cuts suit our preference. Top is before and lower after mods done:
