I go on thinning my collection to make space for a lot of soon incoming custom orders...
For sell is one Suisin Inox Honyaki Gyuto 240mm.
I usually prefer heavier knives, so this one has seen less usage, is almost in new conditions.
I gave ihm an initial edge, followed by 4 touch ups (Kitayama #8000 + Vintage Ohira Renge Suita).
The blade wears the original grind and has not been thinned, the knife comes with original saya.
