1" thick is far too much for almost any knife application. Most titanium gets used in folding knives. For that, 3/16" is about as thick as would be used and .050 to .125 would be much more common.

However, there are people who forge with titanium to make timascus. Those people might be able to use large pieces. Contact alphaknifesupply.com and see if they can put you in contact the makers who might need what you have .........
