An 8" or 10" wheel is handy to have for some things but primarily it is for hollow grinding. Since you plan to flat grind you can postpone getting a large contact wheel until it fits your budget. The 2 and 3" or 4" wheels will work fine on your platen. Small wheels are usually 1/2" which I find most useful. Small wheels usually don't exceed 1", mostly it depends on how you plan to use it. You can use any wheel size you want for any of these applications so long as they match what you want to accomplish....
