You can, wouldn't hurt, but you are going to "re-scar" them with use. I used 1" on my short set for fillet and smaller kitchen blades. Bolted to some heavy angle iron that I modified to saddle up on my post vice jaws. The post vice has "fast" threads - once lined up and adjusted for just a hair wider than the blade thickness, it takes less than 1/4 turn to shut tight.
My larger plates are 2"x3"x30" for larger blades and small cane swords, etc. Right now I'm just using them on my big anvil with small anvil for top weight. Hadn't got round to making saddles for them to use in vice.
