Stayed up late last night to finish smoking a batch of salmon, did something new, added chopped garlic on top along with black pepper, yeooowwwoooww, did it turn out good. The shop cat is hanging around the kitchen.

That looks great, Gene! I am starving on a diet right now, so I would gladly eat that whole pan if I could!!
Living next to Lake Michigan and it's great salmon sport fishery, we ate salmon 3-4 times a week back when I had a boat. There was always smoked salmon in the fridge. Here's the ingredients for a sweet glaze after hickory smoking; put it on a couple times after most of the smoking is complete but with enough time to dry out:
orange juice, maple syrup, brown sugar, "French's" mustard, onion powder, garlic powder, pepper, paprika. It's a marvelous compliment to the taste of the fish, and doesn't mask it at all.

Looks to me like your shop cat there has been eating off a piece of that salmon. Looks yummy from here.
